Citric acid (E330) occurs naturally in many fruits. It is used to enhance acidity in products and also has a mild preservative effect. It can be used in marmalades and juices, where, together with sugar, it helps the fruit’s pectin (a gelling agent) to solidify, giving the marmalade a firm consistency. The recommended dosage is ½ – 1 teaspoon of citric acid per kilogram of berries or liter of juice.
