The true pepper, Piper nigrum, belongs to the diverse Piperaceae family. Black, white, and green pepper all come from this plant. It is a perennial climbing vine that can grow up to 10 meters long. Its flowers are small, ranging from white to green, and its fruit is a single-seed drupe. During harvest, the entire fruit clusters are hand-picked six to eight times per season at intervals of about two weeks.

Black pepper is obtained by picking the green, unripe fruits. They are then fermented and dried in the sun, turning dark brown to black. Black pepper can be used both whole and ground, with the best flavor achieved by grinding it fresh in a pepper mill.
